mild smoked sausage pasta salad

ingredients

  1. 1 lb D&W Mild Smoked Sausage, sliced into coins
  2. 12 oz fusilli pasta
  3. 1½ cups cherry tomatoes, halved
  4. ¾ cup shredded carrots
  5. ¼ cup fresh parsley, roughly chopped
  6. 2 tbsp fresh chives, thinly sliced
  7. ½ cup D&W Parmesan Cheese, freshly grated
  8. 3 tbsp olive oil
  9. 2 tbsp white wine vinegar
  10. 1 tsp Dijon mustard
  11. 1 garlic clove, minced
  12. ¾ tsp salt
  13. ½ tsp black pepper

directions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the fusilli according to package directions until al dente. Drain and rinse under cold water to stop cooking. Transfer to a large mixing bowl.
  2. Grill the sausage: Heat a grill pan or outdoor grill over medium-high heat. Add the sausage coins in a single layer and grill for 2–5 minutes per side or until char marks appear. Set aside to cool slightly.
  3. Make the dressing: In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, garlic, salt, and pepper until emulsified.
  4. Combine the salad: Add the grilled sausage, cherry tomatoes, carrots, parsley, and chives to the bowl with the pasta. Pour the dressing over and toss well to coat everything evenly.
  5. Add cheese and rest: Fold in most of the Parmesan, reserving a little for garnish. Taste and adjust seasoning. Let the salad rest for at least 10 minutes so the pasta absorbs the dressing.
  6. Serve: Transfer to a serving bowl. Top with remaining Parmesan, a scattering of fresh parsley, and a crack of black pepper. Serve at room temperature or chilled.
