ingredients

  1. 1 lb D&W Bacon Cheddar Smoked Sausage, cut into small cubes
  2. 1 lb D&W Uncured Bacon, cooked and roughly chopped
  3. 1½ lbs mini potatoes (about 12–16 potatoes)
  4. 1½ cups D&W Sharp & Creamy Cheddar Cheese, shredded
  5. ¼ cup fresh chives, finely chopped
  6. ½ cup sour cream
  7. 1 tbsp olive oil
  8. Salt and black pepper, to taste

directions

  1. Prep the potatoes. Preheat oven to 425°F. Wash and dry the mini potatoes, then toss them with olive oil, salt, and pepper.
  2. Bake the potatoes. Arrange potatoes on a baking sheet and bake for 25–30 minutes, or until tender when pierced with a fork.
  3. Cook the sausage. While the potatoes bake, heat a large skillet over medium-high heat. Add the cubed D&W Bacon Cheddar Smoked Sausage and cook for 5–7 minutes, stirring occasionally, until browned and crispy around the edges.
  4. Load the potatoes. Remove the potatoes from the oven and carefully cut a deep cross into the top of each one. Gently squeeze the sides to open them.
  5. Add the cheese. Top each potato with shredded D&W Sharp & Creamy Cheddar Cheese, followed by the browned sausage and chopped bacon.
  6. Melt and finish. Return the potatoes to the oven for 3–5 minutes, until the cheese is melted and bubbly.
  7. Garnish and serve. Finish with a dollop of sour cream and a sprinkle of fresh chives. Serve warm.
