grilled sausage wraps

ingredients

  1. 5 Dietz & Watson Pepper & Onion Italian Sausage
  2. 2 cups Dietz & Watson Mozzarella Cheese (shredded)
  3. 10 long skewers
  4. 2 tablespoons canola oil, divided
  5. 1 medium yellow onion, sliced
  6. 2 cups mini sweet peppers, sliced
  7. ¼ cup water
  8. ¼ teaspoon kosher salt
  9. ⅛ teaspoon freshly ground black pepper
  10. 5 flour tortillas (8 inch)
  11. 1 tablespoon fresh parsley, for garnish

directions

  1. Preheat the grill to medium heat.
  2. Lightly oil the grates of the grill with canola oil.
  3. Cook Dietz & Watson Italian Sausages 8–10 minutes covered, turning frequently to brown on all sides. Remove from the grill and set aside.
  4. Heat a tablespoon of canola oil in a skillet over high heat. Add the onion, mini sweet peppers, and water, and season with the salt and pepper. Sauté for 8–10 minutes, or until the vegetables are caramelized.
  5. Lay the flour tortillas on a cutting board and sprinkle evenly with the shredded mozzarella cheese. Top with pepper mixture, and a Dietz & Watson Sausage. Tightly roll up.
  6. Wipe the pan with a damp paper towel. Set the pan over medium-high heat, then add the pepper and sausage wraps, seam-side down. Cook for 3-4 minutes, or until the tortillas are golden brown, pressing down slightly to seal. Flip and cook on the other side for another 3 minutes, until golden brown and the cheese is melted.
  7. Transfer the wraps to a cutting board and use a serrated knife to trim the ends. Cut each wrap into 6 pieces.
  8. Skewer 3 pieces of wrap onto each skewer. Garnish with parsley.
