eggs benedict casserole

ingredients

⅔ pound thick cut Dietz & Watson Originals Black Forest Ham, cut into small pieces

¼ pound Dietz & Watson Originals Gruyere Cheese, diced

¼ pound Dietz & Watson Buffalo Wing Cheddar Cheese, shaved

10 eggs, beaten

⅓ cup of Original Bisquick mix

2 cups half and half

½ cup chopped onions, sauteed and chilled

2 garlic cloves, sliced and sauteed with onion

6 english muffins, split in half, then cut into pieces

1 package(1.25 oz) hollandaise sauce mix

3 tbs chopped fresh chives

Salt and pepper to season

directions

  1. Preheat oven to 350 degrees
  2. Spray 13x9 inch (3 quart) glass baking dish with cooking spray
  3. In a large bowl, mix together eggs, Bisquick, half and half, onions, garlic, thyme, and salt and pepper, whisking thoroughly. Stir in the english muffin pieces, ham, gruyere and cheddar, mix well.
  4. Pour mixture into baking dish, making sure that english muffin pieces are evenly distributed.
  5. Bake 35-40 minutes until golden brown on top and knife inserted in center comes out clean. Let stand 20 minutes.
  6. As casserole is resting, make hollandaise sauce as directed on package.
  7. To serve, scoop out large spoonfuls of casserole, top with some hollandaise and garnish with chopped chives
