Chipotle Turkey with Sweet & Hot Mustard Croissant

Preheat the oven to 350°F.

On a work surface, lay two slices of turkey flat so that they overlap by 1/2 inch lengthwise.  Place two slices of the cheese on top of the turkey.

Spread a generous amount of the mustard over cheese and top with 1/2 cup of spinach.  Roll the turkey up into a roulade.

Lay crescent roll dough flat.  Cut along the vertical perforations in the dough to make four square pieces of dough (leave two triangle pieces connected at the diagonal perforations).

Lightly roll the dough out until twice as long. Wrap the dough around the turkey roulade and place on a parchment paper lined baking sheet.

Bake for 8 to 10 minutes until golden brown.
