Southwestern Chicken Salad

Serves: 4

Ingredients:

  • 1 pound Dietz & Watson® Buffalo Style Chicken Breast sliced 1/4 inch then cubed
  • 1 (15 ounce) can drained black beans
  • 2 cups corn kernals (fresh or frozen-cooked and cold)
  • 1 large diced red bell pepper
  • 1 large (3 inch diameter) whole tomato seeded and diced
  • 1/8 cup finely chopped parsley or cilantro
  • Pepper to taste

Spicy Lime Dressing

  • 1 tablespoon Dietz & Watson® Spicy Brown Mustard
  • 1/2 teaspoon ground cumin
  • Juice of 1 lime
  • 1 clove garlic-minced
  • 1/4 cup olive oil
  • 1/4 cup packed cilantro-minced
  • 1/4 teaspoon Kosher salt
  • Pepper to taste

Instructions:

Combine corn, red peppers, seeded tomatoes and black beans in a large bowl

Fold in chicken breast and fresh parsley or cilantro.

Add pepper to taste

Spicy Lime Dressing

In a small bowl, combine mustard, cumin, lime juicy and garlic

Whisk in olive oil and cilantro

Add salt and pepper to taste
