In a large non stick skillet coated with cooking spray, cook onions & peppers until translucent, about 2-3 minutes.
In a large mixing bowl combine cooked gluten free pasta, 8 raw eggs, cooked onion, peppers, Dietz & Watson® Parmesan Cheese, oregano, basil, salt & pepper. Stir until mixed well.
In a large nonstick skillet sprayed with cooking spray over medium heat, add 1/2 cup of the mixture. (This will make 4 inch frittatas.)
Cook for 3-4 minutes until the mixture becomes golden brown. Flip & repeat.
Remove from pan & reserve.
Repeat this process until you have 8 frittatas.
Over medium high heat, place Dietz & Watson® Canadian Style Bacon in skillet & cook for one minute on each side.
Top 4 frittatas with 2 slices of Dietz & Watson® Canadian Style Bacon, 2 slices Dietz & Watson® Provolone Cheese & 1 cooked egg.
Top with the remaining frittatas.
