Instructions:
Prepare the Skewers: To make the skewers, soak 4 bamboo skewers (8 to 12 inches long) in water for about 30 minutes. (You can skip this step by using metal skewers.) Place a piece of pork, bacon, onion, and bell pepper on each skewer, continuing the process until the ingredients are equally divided among the skewers. Season the skewers with salt and pepper, brush with oil, and set aside in a shallow casserole dish or pan to marinate in the refrigerator for 1 hour.
Place on the grill over medium heat and cook until there are grill marks on all four sides, about 2-3 minutes per side.
While the Skewers are grilling, prepare the Pineapple Glaze: In a medium saucepan over medium heat, whisk together the brown sugar, honey, lemon juice, 1/4 cup of the wine and pineapple, and bring to a boil over medium heat.
Whisk together the remaining 1/4 cup wine and the corn starch to make a slurry. Whisk into the sauce, bring back to a boil and boil for 2 minutes more.
Remove from the heat and brush the glaze over the skewers.
