Grilled Kielbasa with Spicy Cream Sauce

Serves: 4

Ingredients:

Sauce:

  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons finely chopped garlic
  • 2 tablespoons finely chopped Dietz & Watson® Gourmet Imported Bacon
  • 2 tablespoons chopped onion
  • 2 tablespoons finely chopped green or red bell pepper
  • 1 tablespoon all-purpose flour
  • 1 1/2 tablespoons Hungarian paprika
  • 1/2 cup full-bodied red wine, such as Burgundy
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon dried red pepper flakes
  • Salt
  • Freshly ground black pepper
  • 3 tablespoons sour cream
  • Chopped fresh chives, for garnish

Instructions:

Place the kielbasa on the grill over medium heat and brown on all sides, about 2 to 3 minutes per side. Remove and keep warm.

To make the sauce, heat the butter in a sauté pan over high heat, toss in the garlic, and sauté until slightly softened, about 1 minute. Add the bacon, sautéing until crisp, then add the onion and bell pepper, sautéing until slightly softened, about 2 to 3 minutes.

Stir in the flour and paprika and add the wine to deglaze, stirring with a wooden spoon to loosen any browned bits on the bottom of the pan. Bring the wine to a boil, and cook for about 5 minutes.

Stir in the cayenne pepper and red pepper flakes and season with salt and pepper.

To serve, slice the kielbasa on a bias and fan out over German Potato Salad.  Stir the sour cream into the sauce, and spoon the sauce over the kielbasa, garnishing with chives.
