To Prepare Potatoes:
Place potatoes whole in a large pot of generously salted water.
Bring to a boil cooking the potatoes until they are fork tender, about 20 minutes
Remove from water and let cool in refrigerator over night.
To Prepare the Salad:
In a large skillet, heat vegetable oil over medium high heat, add Dietz & Watson® Buffalo Style Chicken Sausage cooking until browned on each side. About 4 minutes on each side. Or grill until browned
Slice the browned sausage on a bias & reserve
In a large mixing bowl, combine Dietz & Watson® Sweet Pepper Mayonnaise & red wine vinegar. Whisk until thoroughly combined
Add garlic & whisk again
Slice the cooled, potatoes in half (or quarters if the potatoes are larger)
Add potatoes, mushrooms, onion, peppers & pickles. Toss until thoroughly combined
Add the lettuce & toss lightly
At the last moment, add the sliced sausage. Toss until combined
Salt & pepper to taste & serve
