Gluten sensitivity usually happens either through a wheat allergy or through Celiac Disease. There is a difference between these two definitions (See Table Below) but the bottom line for both ailments is the avoidance of foods containing wheat, rye or barley proteins.
When I conduct nutrition counseling with patients who have a wheat allergy or Celiac Disease, I look for recipe ideas and foods that do not contain gluten. Foods I advise gluten-free consumers to enjoy are foods that they CAN have . Examples are: fish, eggs, plain poultry, beef, pork, eggs, nuts, legumes, milk, yogurt, cheeses, fruits and vegetables and the following grains: amaranth, buckwheat, corn, potato, rice, flax, millet, quinoa, rice, sorghum and teff.
